Ingredients
3–4 lb beef chuck roast
2 Tbsp olive oil
1 large onion, sliced
4 carrots, cut into chunks
4 potatoes, cut into chunks
3 cloves garlic, minced
2 cups beef broth (or stock)
1 cup red wine (optional, but adds richness — can sub with more broth)
2 Tbsp tomato paste
2 sprigs fresh rosemary
2 sprigs fresh thyme
2 bay leaves
Salt & pepper to taste
Instructions
Preheat Oven
Heat oven to 300°F.
Sear the Roast
Season roast generously with salt & pepper.
Heat olive oil in a large Dutch oven over medium-high heat.
Sear roast on all sides until nicely browned (about 4–5 minutes per side). Remove and set aside.
Build the Flavor
In the same pot, sauté onions, carrots, and garlic for 3–4 minutes.
Stir in tomato paste, then add red wine. Scrape up browned bits from the bottom.
Braise Low & Slow
Return roast to pot. Add potatoes, beef broth, herbs, and bay leaves.
Cover with lid and place in oven.
Cook for 3–3.5 hours, until beef is fork-tender.
Serve & Enjoy
Discard herbs and bay leaves.
Slice or shred beef and serve with vegetables and rich pan juices.
