Ingredients

  • 3–4 lb beef chuck roast

  • 2 Tbsp olive oil

  • 1 large onion, sliced

  • 4 carrots, cut into chunks

  • 4 potatoes, cut into chunks

  • 3 cloves garlic, minced

  • 2 cups beef broth (or stock)

  • 1 cup red wine (optional, but adds richness — can sub with more broth)

  • 2 Tbsp tomato paste

  • 2 sprigs fresh rosemary

  • 2 sprigs fresh thyme

  • 2 bay leaves

  • Salt & pepper to taste

Instructions

  1. Preheat Oven

    • Heat oven to 300°F.

  2. Sear the Roast

    • Season roast generously with salt & pepper.

    • Heat olive oil in a large Dutch oven over medium-high heat.

    • Sear roast on all sides until nicely browned (about 4–5 minutes per side). Remove and set aside.

  3. Build the Flavor

    • In the same pot, sauté onions, carrots, and garlic for 3–4 minutes.

    • Stir in tomato paste, then add red wine. Scrape up browned bits from the bottom.

  4. Braise Low & Slow

    • Return roast to pot. Add potatoes, beef broth, herbs, and bay leaves.

    • Cover with lid and place in oven.

    • Cook for 3–3.5 hours, until beef is fork-tender.

  5. Serve & Enjoy

    • Discard herbs and bay leaves.

    • Slice or shred beef and serve with vegetables and rich pan juices.
