Ingredients
3–4 lb sirloin tip roast
2 Tbsp olive oil (or melted butter)
3 cloves garlic, minced
1 Tbsp kosher salt
1 Tbsp coarse black pepper
1 Tbsp paprika
1 tsp onion powder
1 tsp dried thyme
(Optional) 1 Tbsp Dijon mustard for extra crust
Instructions
Prep the Roast
Remove roast from fridge 1–2 hours before cooking so it comes to room temp.
Pat dry with paper towels.
Season Generously
Mix olive oil (or butter), garlic, and seasonings into a paste.
Rub all over roast (if using Dijon, brush it on first, then season).
Set Up the Pellet Grill
Preheat to 225°F.
Use oak, hickory, or mesquite pellets for a rich smoke, or cherry/apple for a milder sweetness.
Smoke the Roast
Place roast directly on grill grates, fat-side up.

Sear 8–10 minutes until internal temp hits:
130°F for medium-rare (best for sirloin tip)
135–140°F for medium
Rest & Slice
Tent with foil, rest 15–20 minutes.
Slice thin, against the grain for maximum tenderness.
